Combine the following ingredients and set aside.
5 Cups All Purpose Flour
1/4 tsp. Baking Soda
1 tsp. Ginger
1 tsp. Cinnamon
1 tsp. Salt
1/2 tsp. Ground Cloves
Melt togther in a saucepan:
1 C. Butter...cool slightly, then add and mix well:
1 C. Sugar
1 C. Molasses
1 Egg, slightly beaten
Then, add only 4 Cups of the flour and spice mixture to this and mix well. Turn mixture out onto a lightly floured surface and knead in the remaining flour mixture, adding more flour as needed to make the dough stiff.
Roll a portion of the dough out onto parchment paper and cut your pieces. Lift the unused dough from around the cutout. This maintains the shape of the cookies.
Bake at 325 for15-20 minutes. Due to differences in oven temperatures, this may need to be lengthened or shortened. Your cookies need to be crisp, but not burned. Cool completely before trying to assemble.
